Okinawa Kokuto is an unrefined whole cane sugar. Its made by reducing fresh, hand-cut sugar cane sap into a rich syrup. Traditionally this syrup is then either pressed to form blocks, or stirred to form a powder with a deep, complex flavor that varies depending on the island it was grown on. The Okinawa Prefecture, south of the southernmost main Japanese island of Kyushu, consists of over 160 islands, only 48 of which are inhabited. Seven of these islands make their own version of this sugar. The sugar in this bag comes from the Hateruma Island, a small island of just 500 people, most of whom work to produce this sugar. Its considered the highest quality of all the kokuto sugars produced in the Okinawa Prefecture. Unlike normal refined sugars (including those marketed as "raw"), our Kokuto sugar never goes through the extensive series of refining steps that turns cane juice into the crystallized sugar you see on the shelves at the supermarket. The result? A vastly more flavorful and nuanced sugar that has all kinds of culinary applications. Because it is a natural product, there may be slight variations in the color, granule size, and even in the flavor of the sugar - depending on the season when it was made.
